Orange melonpan

Hello, here I am again with my ‘as usual experiment’. This Orange Melonpan inspired from mixed between Chinese Pineapple Bun and Pan Dulce, Mexican sweet bread.

Anyway this is the second recipe that I tried from mixing ingredients and methods for this sweet bread.

The final product was airy buns with sweet crust, not too sweet. The color could be any color you like. If you don’t like using food coloring, you can skip it , and you will get  golden crust buns. I used orange color because I added orange flavor into the dough.

There will be bread dough and cookie dough.

Bread Dough :

  • 140 g flour + (I need more for dusting when I kneading)
  • 1 tbsp dried yeast
  • 2 tbsp granulated sugar
  • 1/3 tsp salt
  • a half of 1 beaten egg ( the other half for cookie dough later)
  • 1 tbsp butter
  • 70 ml warm water

First, in a large mixing bowl : flour + sugar + yeast + water + egg, mix together then add salt.

It will be sticky. I used long wooden spoon to mix them. Then transfer into floured working place

Knead and do little slam for few times with the dough to make it elastic.

Knead and press until smooth and no more sticky. Slam again for few times the smooth dough into working place.

Flatten the dough and put the butter on it. Make dough into ball to cover the butter.

Knead again. Slam again. Knead again until smooth !

Shape into ball and cover in warm place (about 37 c) for about 40 minutes.

After 40 minutes, flatten the dough and shape into cylinder. Cut into small pieces (as you like).

Shape into balls and put on baking tray with parchment paper.

Cover again and let it rest for about 25 minutes.

I made the cookie dough while the bread dough rest for 40 minutes. (the first rest)

Cookie dough :

  • the rest of beaten egg (remember ?)
  • 85 g flour
  • 25 g butter
  • 40 g sugar
  • 1/2 tsp baking powder
  • 1 small sachet of orange flavor
  • I used orange food coloring
  • flour for dusting
  • granulated sugar for coating

Whisk butter until creamy, add sugar gradually and whisk until white. Gradually add beaten egg.

In another bowl, flour + baking powder. Sift 2x then add gradually into butter mixture.

Add orange flavor and food coloring, give little knead to smooth.

Shape into cylinder/log and cover with plastic wrap. Put in the fridge for an hour.

After an hour, divided into equal pieces. The same quantity with the bread buns. ( I made 5 buns, so I divided cookie dough into 5 too ).

Roll each cookie dough between plastic wrap into round flat ( I made about 10 cm diameter)

Wrap cookie dough on to  bread buns (after rest for second time). The cookie dough wrapped buns smoothly.

By handle the seam with one hand, then roll into granulated sugar to coat evenly.

Make pattern as you like ( cut tip cross with a knife ).


Cover and let rest in warm place for about 40 minutes until double in size.

Bake at 340 F /170 C  preheated oven for about 12-15 minutes.

Take out from oven and let it cool. Me ? I like to enjoy it while still warm.
