There happens to be a lot of potatoes at home and better to cook some easy recipe before they sprouting.

One that I like is Potato Chili.

Spicy, slightly sweet and savory. Can be eaten as side dish or just a snack. Super duper easy to make it and if you do not like chili, then omit the chili and replace with paprika powder to get red colour.

Ingredients:

  • 4 large potato, peeled, wedges
  • water
  • some spring onion for garnish, chopped

Seasoning:

  • 2 tsp dried chili flakes (or paprika powder)
  • 1 tbsp tomato sauce/paste
  • 1 tsp sugar
  • 1 tsp salt
  • 1/2 tsp turmeric powder
  • 1/2 tsp garlic powder
  • 1 tbsp crispy shallot/onion (fried shallot/onion)
  • cooking oil

Boil potato wedges in salted water until nearly soft, but not too soft. Drain.

Fry/bake until golden brown, set aside.

In a large pan, drop 3 tbsp of oil, stir fry all seasoning in medium heat until you see the oil turned red.

Add 2 tbsp water and stir again.

Add potatoes and stir well to combine so all potatoes coated with the seasoning.

Adjust the taste depending your personal taste. Add seasoning if necessary.

Stir until the seasoning dry and transfer to serving dish, sprinkle with chopped spring onion.

Serve warm.
