Burger paprika and flat beans

When I visited Stoffmarkt (Fabric Market) in Dillenburg – Germany on the 1st of November this year, I passed vegetables stand that are full of fresh produce. They are in good price too. I wish I could by all those beauties but since we are only two, it couldn’t be finish in time. Beside, not all vegetable are Big Bear’s favourite.

One of vegetables that I bought was flat beans or Italian beans. In this recipe for flat beans, I did stir fry with shallot and diced beef salami. Delicious thing doesn’t have to be expensive.


Beef Burger

  • 300 g lean ground beef
  • 1 egg
  • 2 tbsp breadcrumbs
  • salt and pepper to taste
  • a pinch each of dried oregano and parsley
  • cooking oil

Mix all ingredients except oil, mix well and shape into two big balls.

With little oil in pan, fry the beef burger balls until brown all sides, half-cooked.

Remove and set aside.

Paprika sauce

  • 2 fresh paprika, sliced thin (I used red & yellow)
  • 1 medium onion, sliced thin
  • 2 cloves garlic, crushed
  • 2 tbsp tomato paste
  • 1 tsp chili flakes (optional)
  • 1 tsp Hungarian paprika powder
  • a pinch of sugar, adjusted to your taste
  • salt and pepper
  • 250 ml beef stock or water

Use the same pan from the burger, add a little oil and sauté onion and garlic until softened.

Add the paprika, stir and add tomato paste, paprika powder and chili flakes if using. Stir well to combined.

Add beef stock/water and bring to boil.

Add half-cooked beef burger into the pan, stir to coat with the liquid.

Lower the heat and simmer until the burger balls cooked, paprika softened and the sauce reduced, slightly thick.

Add stock /water if necessary when you think that the burger need longer to cook

Season with sugar, salt, and pepper adjusted to your taste. Stir well and transfer to serving dish.

Stir Fry Flat Beans

  • 300 g fresh flat beans, remove the unwanted part, rinsed.
  • 2 shallots, slice thin
  • 4 slices beef salami (optional), finely dice
  • salt and pepper to taste
  • cooking oil (I used sunflower oil)
  • a splash of water

Break by hand the flat beans according to your desired size. Quick boil for 3 minutes, drain.

Heat 2 tbsp oil in a hot pan, sauté sliced shallots and salami until shallots softened.

Add flat beans and stir vigorously to combine and the beans change colour.

Splash with water then put the lid on. Cook for about 5 minutes.

Season with salt and pepper and stir well.

Transfer to serving dish and enjoy with other dishes.
