Vegetarian Wonton Soup

Wonton soup with vegetarian fillings in yellow clear broth with bok choi and carrot garnish with chili sauce

Vegetarian Wonton Soup recipe by Ninik Becker.

The softness of wonton skin and the clear soup brings out the original flavor of the ingredients. This is simple and healthy food can be served as an appetizer or enjoyed simply by adding the number of wonton according to your wishes or eaten with noodles.

I enjoyed the succulent and juicy dumplings with bok choy and Sichuan chilli sauce. By the way, I like the Sichuan chilli sauce that contain coarsely red chilli mix with fried peanuts, diced dried tofu, and I think there is kind of preserved radish or the like that I couldn’t describe it but it was delicious. The level of spiciness is moderate.


Vegetarian Wonton :

The number depends of how much you want to have. Adjust the wonton skin with the filling, depends of the size.

  • ready-made wonton skin, this time I chose white and round cut
  • 250 g bok choy, wash, chopped
  • 1 medium carrot, minced
  • 1/2 block firm tofu, mashed
  • salt and pepper

Mix chopped bok choy, minced carrot and mashed tofu. Season with salt and pepper.

Fill each wonton sheet with the filling.

Lay wonton skins on the work surface and put a teaspoon of filling on each wonton skin

Form the wonton to your favorite shape. Set aside.

After put the filling, form wonton into your favorite shape


Clear Soup :

  • 5 or more dried Shiitake mushrooms, soaked until soft
  • 1000 ml vegetable stock (or more)
  • 1 large tomato or a handful of cherry tomatoes, chopped
  • 250 g bok choy, cut the bottom stem, washed
  • salt and pepper

In a pot, boil mushroom and tomato in vegetable stock for about 15 minutes in low heat.

Increase the heat and gently add the wonton, bring to boil. Add bok choy.

Cook until wonton come up to the surface and bok choy wilt. Season with salt and pepper.

Transfer into serving bowl and add a dollop of chilli sauce if you like.
