Potato Croquettes Panko


Potato Croquettes Panko recipe by Ninik Becker.

This is very simple dish that can enjoy any time of the day as a snack, or as a side dish or as an appetizer. Also good as finger food by making it into different shapes and smaller size.

In this recipe I make it without meat and somebody who like meat can add any kind of meat such ground beef, chicken, bacon, sausage, ham, Spam, or even fish and seafood.

If using meat, use minced or finely diced meat and sauté together with other ingredients. The cooking process is not long since panko easily get burnt.

Golden brown, crispy outside and soft inside, hot, delicious, potato croquettes panko.

When eat these, you may got crumbs falling down on your lap.

Potato Croquettes Panko

Ingredients :

Potato mixture :

  • 4 large potatoes, peeled
  • 1/2 cup finely diced carrot
  • 1 cup finely chopped spinach
  • 1 onion, finely chopped
  • 2 tbsp all-purpose flour
  • salt and pepper
  • 1 small egg or only the white.
  • oil
  • (150 g minced/ground/finely diced meat, if using)

Potato croquettes mixture

Cut peeled potato into chunks, boil until soft. Drain well and mashed, let it cool.

Heat the pan with little oil, cook chopped onion until softened, add carrot (and meat if using). Stir until carrot (and meat) cooked, season with salt and pepper. Add spinach and stir to wilt and no liquid in the pan.

Mix the carrot mixture into mashed potato, add egg (or egg white) and flour. Season with salt and pepper and mix well to combine. If still warm, let it cool first.

Shape into oval patties, place on the plate and chill in the fridge to firm, about an hour.


Breading Croquettes :

  • 1/2 cup all-purpose flour
  • 2 egg, beaten
  • 2 cups panko (Japanese bread crumbs)
  • oil for frying

Put flour, beaten egg and panko, each in different plate or bowl.

Start breading process, coat firm potato patties with the flour, dip into the beaten egg and coat well with the panko. Repeat the rest until finish.

Fry in medium heat for about 3-4 minutes per side. In this recipe I used a pan for frying.

Fry until both sides golden brown and crispy. Remove and put on paper towels to release the excess oil.

Serve and enjoy with favorite dipping sauce.
