Chicken Wings Savory Oatmeal recipe by Ninik Becker.
Basically I’m not a fan of oatmeal, to compensate the slippery texture and somewhat slimy, I have added fried chicken wings in it. Eating oatmeal with fried chicken wings? Am I crazy ? Well..maybe a bit so, but why not? It was so good and I’m not sure anymore it’s still called healthy meals or rather call comfort food.
Ingredients A :
- 6 pieces of chicken wings (mid joint & drumstick), rinse, pat dry.
- 2 tbsp or more chicken seasoning mix
- 1/2 cup rice flour
- canola oil for frying
Ingredients B :
- 1 cup oatmeal, I used Rolled Oat old-fashioned
- 4-5 cups of vegetable or chicken broth (or water)
- 1 onion, finely diced
- 1/2 cup sweet corn kernel
- 1 stalk green onion
- 1/4 tsp turmeric powder
- salt & pepper to taste if use water
- a pinch of chilli powder
- 1 tsp olive oil
Make ahead : mix well chicken wings with the seasoning mix until well coated. Put in the fridge to marinate, longer is better. Put out from the fridge when ready to fry.
Preheat oil in the frying pan . Coat well the chicken wings + the seasoning-on, into the rice flour.
Fry in medium high heat until golden brown, check the thickest part of the chicken to make sure it cooked. Release the excess oil on the paper towels.
In a saucepan, sauté diced onion until softened, add corn kernel and green onion, stir to cook. Pour the broth (or water) into the mixture and add the oatmeal. Bring to boil and lower the heat to simmer . Season with the rest of seasoning according to your taste. Stir occasionally, add more liquid as needed until your desired texture.
Add fried chicken wings into the oatmeal porridge, stir briefly and remove from the heat.
Serve, garnish with sliced parsley or green onion if you like.
