Easy Peasy Pain au Chocolat

Life can be easier with bite of chocolate….

This flaky pastry was made from homemade pastry dough. If using store-bought puff pastry sheet, then the 30 minutes rest is not necessary. I used dark chocolate in this recipe but milk chocolate will be great for somebody with sweet tooth.

Ingredients :

  • 500 g puff pastry dough (homemade)
  • 100 g dark chocolate/milk chocolate
  • 1 egg for egg wash

Method :

  • Roll out puff pastry dough into large rectangle. Mine was 30 x 40 cm.
  • Cut into 10 equally size 15 x 8 cm rectangles.
  • Cut the chocolate into finger size if possible or just break into small pieces.
  • Put some of chocolate on the narrow edge of pastry and then roll up. Repeat the process until finished.
  • Put on baking tray, seam side down. Because I use homemade puff pastry dough, I let the pastry rolls to rest for 30 minutes covered, until risen.
  • In the last 10 minutes rest, preheat the oven at 210°C.
  • (If you use store-bought pastry sheet, skip the ‘resting time’, and preheat oven before you roll up the pastry).
  • Beat the egg, brush on the surface of pastries.
  • Bake at 210°C for 15-20 minutes until golden brown, puffy and crisp.
  • Remove from oven, allow to cool slightly before put on serving dish. This pastry can be served warm or at room temperature.
  • Note : beware that when just come out from oven, the chocolate still melt, oozing, and hot ! Please don’t directly eat or it will burning your tongue.

You can make the size smaller for mini Pain au Chocolat or cut into triangles to make Chocolate Croissant.

Baked Egg Potato

 

Super Easy Breakfast Ideas recipe by Ninik Becker.

 

#1. Baked Egg Potato (photo on top)

Preheat oven at 200°C. Scrub and wash 2 large oval shape potatoes, pat dry. Prick all over surface with a fork then rub with salt. Bake in the oven for about 40 minutes until soft. Remove from oven let slightly cool. Cut into half lengthwise. Using spoon, scoop out potato flesh to make a well in the center, season with salt and pepper or your favorite seasoning. Fill each potato shell with one egg, if the white too much, set aside for another use. Season again then put back in the oven. Bake at 200°C for 15 – 20 minutes until egg white set.

 

#2. Egg in the Hole

Two slices of whole wheat toast bread. Spread with butter/margarine on both sides. Make a hole in the middle using cookie cutter or glass rim. Grill in the pan with low heat until bottom side turned brown. Flip and add little butter/margarine in the hole and crack one egg into the hole, season with your favorite seasoning and cook until the whites set and the yolk still runny. Transfer onto serving plate. Serve the round cut bread as well together with some greens or fruits.

 

#3. Turkey Breast Open Sandwich

Toast whole wheat bread as you wish, spread with Herb Cream Cheese or butter, top with lettuce and turkey breast (could be prepackaged or leftover dish). Snuggle some cherry tomatoes and fresh red radish as you like. Season with your favorite seasoning such salt, pepper, cayenne pepper, paprika powder, chilli powder etc.

 

#4. Poached Egg on Toast

Poach egg(s) in small boiling water until the white set and the yolk still soft, set aside. Toast whole wheat bread(s). Put toasted bread on the serving plate, top with some greens. Add poached egg on top and season with salt and freshly cracked black pepper. The egg yolk should be still runny when you cut it.

 

#5. Avocado Chicken Open Sandwich

Toast whole wheat bread, spread herb cream cheese/butter. Top with chicken breast (leftover or prepackaged), top with sliced cherry tomato and sliced avocado. Season with salt, black pepper and chilli powder or your favorite seasoning.

 

#6. Chicken Sandwich

Toast two slices of whole wheat bread, spread with herb cream cheese/butter. Top one bread with lettuce, sliced chicken breast and cherry tomatoes. Season with your favorite seasoning. Cover with the other bread, secure with little stick then slice the sandwich into two or jus enjoy the way it is.

 

#7. Red Velvet Mug Cake – Microwave

Large mug. Add 3 tbsp oil + 2 tbsp yogurt + 1 tbsp milk + 1 small egg + 1 tsp vanilla + 1 tsp red food colour. Mix using a fork in the mug, until smooth. Add 4 tbsp flour + 4 tbsp sugar + a pinch of baking powder + 1 tbsp cocoa powder + a pinch of salt. Mix together until just combined. Microwave in high heat for about 45 second, check with toothpick. Continue microwave for a few second if you think not cook enough. If you use small mug, the mixture will spill out during process. Every microwave may have different result.

 

 

 

Asparagus Brötchen Sandwich

Asparagus Brötchen Sandwich

When you are in Germany, you will find this sturdy, plump, crusty, and chewy bread rolls called Brötchen everywhere. This is one of the reasons that I like about Germany. I have tried once in the past to make at home and it turned out not bad but of course I couldn’t beat the bakery which has made those tempting rolls a million times over the decades.

There is no exact recipe for this sandwich, use anything you like to put between the bread and grill until the cheese melts. I prefer the cheese just slightly melted, enough as the glue to unite ingredients stick together and won’t be splattered when cut into pieces.

Ingredients : for one

  • one Brötchen. Slice open into two.
  • some green asparagus, break and remove the hard part. Blanch a few minutes, drain.
  • a dollop of herb cream cheese, or more.
  • a few slices of salami/bacon/ham/smoked meat/anything you like. Egg will work too.
  • a slice of cheese (in this recipe I use Gouda cheese).
  • extra hot chilli powder (optional).
  • a little butter.

 

Toast the Brötchen.

Spread base cut of the bread with herb cream cheese, stuff with blanched asparagus.

Add a few slices of salami and a slice of Gouda cheese fold into two. Drizzle some extra hot Indian chilli powder. Cover with the other slice of bread.

Heat a little butter in the pan, grill the sandwich by pressing the top with strong spatula or smaller pan (I did) or anything heavy enough to press the Brötchen slightly flat. Grill until you see the cheese melted. Transfer onto serving plate. Or onto chopping board like me.

Grab with both hands and eat directly just like that, or cut into pieces for easy eating.

Mango Cherry Cake

Mango Cherry Cake recipe by J.B. Big Bear.

This cake is made using yeast dough base.

I got this original recipe from Big Bear which is wrote in German. It was simple cake recipe using fresh yeast, as you know that many German baking recipe using fresh yeast. In Europe fresh yeast usually packed in small cube for 42 g or 1.5 oz, in US usually about 17 g or 0.6 oz. In Australia I heard usually packed in 1 kg and cut into small chunks.

10 g of fresh yeast = one teaspoon of dry yeast.

He didn’t use too much sugar in this recipe, since I don’t like sweet things. So if you interested to try may need to add the sugar measurement according to your taste.

Usually, we enjoyed it with a scoop of ice cream or a big dollop of cream along with a hot coffee or cappuccino. The chopped almonds added the texture and the sweet and sour from mango and cherries completed the flavour.

There is ingredient in this recipe called Speisequark. In Germany or German-speaking country Quark is commonly use in the recipe for variety of dishes, sold in small plastic tubs just like yoghurt tubs. There are several kinds of Quark and Speisequark or Quark dessert is one of them.

The fruits and the nuts could be varied.

Dough :

  • 500 g all-purpose flour
  • 250 g Speisequark
  • 150 g granulated sugar or more, adjust to your taste
  • 3 eggs
  • 42 g fresh yeast (1 cube )
  • 250 ml milk

In a small saucepan pour the milk and use hand ,break fresh yeast in, warm up over low heat to dissolve. Only warm, not too hot please. Too hot liquid may kill the yeast.

In mixing bowl with dough paddle, put the flour, Speisequark, sugar, eggs, and yeast mixture into the bowl and mix in medium speed for about 3 to 5 minutes into a thick and sticky dough. Cover and let rest until double in size, depends of the temperature of your room.

Filling :

  • 100 g cocoa powder
  • about 40 ml milk
  • 1 fl Rum
  • 100 g granulated sugar
  • 50 g chopped almonds

Mix cocoa powder, milk, Rum and sugar. Set aside.

Toppings :

  • 230 g or more mango sliced
  • 250 g a jar of sour cherries
  • 50 g chopped almonds

 

  1. When the dough has double in size, preheat the oven at 200 C.
  2. Prepare baking tray and layer with parchment paper. Sprinkle thin layer of flour over the parchment paper and put the dough. Sprinkle the dough with flour to prevent sticky. Big Bear coat the rolling-pin with flour as well.
  3. Using a rolling-pin, roll out the dough to spread evenly. Spread the filling of cocoa mixture and sprinkle the chopped almonds filling on top. Fold the dough like a book. Make a little neat on the edges.
  4. Arrange the toppings ingredients on top, as you like.
  5. Bake for about  25 to 30 minutes until tooth pick come out clean and the cake golden. Let slightly cool before slice it.

Now, take a slice of that cake, take a scoop of your favorite ice cream or if you don’t like ice cream maybe with generous cream on the side. Enjoy with warm drinks.

Apple Ring Bread

Apple Ring Bread

Tired of designing and cutting dress pattern of my new creations, I looked into the kitchen and saw a pile of gala apples I had bought yesterday at the local market. Seem to be apple season now and I have bought a box of it.

And now the little problem is, Big Bear doesn’t like to eat apple just like that, so I think I’m gonna snuggle some of them into the dough and bake it. After that he enjoys apples without having to eat the ‘Apple’.

Maybe my recipe slightly different with common apple bread. The dough just slightly sweet. Serve with whipped cream and ice cream if you like. I think adding a glaze on top would be nice only that I was lazy to make it.

Ingredients :

Dough

  • 2 cups all-purpose flour
  • 1 packet dried yeast
  • 1 tsp baking powder
  • 1 sachet vanilla sugar
  • 1 large egg
  • 2 tbsp oil
  • 3 tbsp sugar and a pinch of salt
  • water as needed

Filling

  • 4 gala apples, peeled, small cubed
  • 1 tbsp toasted sesame seeds
  • 2 tbsp sugar
  • a half lemon
  • 1 egg yolk for brushing

 

  • Whipped cream and ice cream to serve

 

Methods :

  • Mix all dough ingredients in a large mixing bowl. I used a wooden spoon to mix it.
  • Add water a little at time to make a dough. If you think the dough consistency just right, stop adding water.
  • Transfer onto working surface and knead until smooth and elastic.
  • Shape into a ball and put back in the bowl. Cover to double in size. Couldn’t say exactly how long, it depends of your room temperature and the weather.
  • When the dough has risen, peel apples and cut into small cubes. Squeeze lemon over apple cubes, add sesame seeds and sugar. Stir.
  • Roll the dough using a rolling-pin then spread apples filling over it.

  • Roll into a log and combine both end to make a ring shape.
  • Use a scissor to make small cut section around the ring . Cover with loose a towel and rest for 30 minutes.
  • Brush with beaten egg yolk.

  • Bake in preheated oven at 180 C until the dough rise and golden brown.

Again, it depends on the character of your oven, every oven different. Please watch out the way your oven working. Ha..ha..ha..just joking but help.

If you use egg yolk like me, the bread will have more color than use whole egg.

Potato donuts

Still on potato and this time, donuts. Or doughnuts? Potato Donuts

The recipe is from my mother that she often made when I was small cute kid.

I like small donuts too!

Because I think that the small one more comfortable to eat than the jumbo one. I mean I feel comfortable to devour ha..ha..ha..

Do you like some? Come to my home and we enjoy them with a hot drink !

Eat two mini donuts will not make you bigger, unless you gobble up a dozen of them at the same time.

Well let’s make it.

These ingredients make about 20-22 pieces mini size and less if you make bigger size.

Ingredients A :

  • 2 medium potato, boiled, mashed evenly
  • 300 g flour, separate half-half
  • 1 sachet dried yeast, dissolve with 50 ml warm water
  • 1 tsp baking powder
  • 2 tbsp granulated sugar
  • 2 tbsp milk powder ( I used coffee creamers)
  • 2 eggs

Extra flour for kneading

Ingredients B :

  • 2 tbsp butter ( I used margarine ), melted
  • 1/2 tsp salt

In a large mixing bowl, mix together ingredients A, use a half (150 g) of flour.

I mixed it with a wooden spoon into sticky dough. Cover with a towel and let rest warm place for 30 minutes (first rest). I put near the window with bright sunlight.

After 30 minutes and the dough rise, add ingredients B and the rest of the flour to the dough.

Knead until smooth and elastic, if still sticky please sprinkle with extra flour as needed. Potato dough will make it more sticky than just flour dough.

After the dough smooth and elastic enough, cover again and let rise for about an hour (second rest).

After rise for second rest, roll out the dough with a rolling-pin on floured work surface. Cut into circular shape and make small hole in the middle.

I used glass rim to cut the dough and make the hole in the middle with bottle cap. I don’t have donut mold. Do you see a yellow bottle cap in the top corner?

Fry in plenty of oil with medium low heat. High heat will make donut burst or broken.

Flip them to have evenly golden colour. I fried them in few batch.

Place fried donuts on paper towels to release excess oil. Let it cool.

Make topping as you like. I made some chocolate glaze then sprinkle with chocolate and coloured sprinkles, some with powder sugar.

The fact is, my husband Big Bear, came home from work and he had finished five pieces.

Yumm…the texture was perfect!  Puffy!

Crisp outside and some small hollow inside. Enjoy with hot drinks.

Asparagus Breakfast

Talk about asparagus, I like this vegetable. For breakfast, brunch, or dinner  ( I like more the green one). For my Asparagus Breakfast today I pair it with whole grain bread, loaded with seeds. My favorite bread all time.

But my husband is not a fan of this vegetable. Not at all. So when I make this asparagus for breakfast mean only for me. Since asparagus only sell in a bunch, then I have to eat all alone, in a few ways of course.

Last Saturday before we have coffee with mother in law, she asked for meeting us in farmer market not far from Flohmarkt , as she said. There she was busy choosing white asparagus. She like to enjoy it with Hollandaise sauce. Ist Spargelzeit in Deutschland. Mostly white asparagus.

Then yesterday I saw beautiful green one in the local supermarket. And I pick a bunch of radish too.

Let’s make very simple asparagus breakfast my way.

Ingredient:

  • green asparagus, the number is up to you
  • egg, the number is up to you
  • bread ( I use whole grain bread )
  • a bit of red radish if you like
  • salt and freshly crack mix pepper
  • a little olive oil
  • margarine for spread the bread

Cut the hard end of asparagus, wash and boil until cooked but still crunchy.

Clean and slice the red radish.

Make a sunny side egg with a little olive oil.

Slice the bread and toast.

Spread toasted bread with margarine/butter, top with fresh sliced radish, top with boiled asparagus, top with fried egg and season with salt and pepper, top with the other slice of bread. Oh, I sprinkle my egg with cayenne pepper powder too, because I like it for more kick.

Enjoy super duper simple asparagus breakfast.
