Pandan Egg Steamed Buns

Pandan has specific flavour and fragrant aroma that can not be replaced with any other ingredients. Pandanus leaves commonly grow in South East Asia but we can find easily the Pandan extract everywhere in Asian store, usually in a small bottle.

In Indonesia, Pandan use for many kind of dishes and dessert.

The fresh Pandan leaves look like these.

In this recipe I used Pandan extract. If using Pandan juice, use as replacement of water in the dough making.

Tortilla Vegetable Rolls

Tortilla Vegetable Rolls


Tortilla Vegetable Rolls recipe by Ninik Becker.

This is cold dish, very simple and cute for snack, as appetizer, as finger food for party, or just for simple breakfast. As usual, it is flexible recipe so you have choice for anything you like for the filling.

I found those bamboo sticks in Asian store.

Tortilla Vegetable Rolls

This recipe use one tortilla bread, adjust as you desired. The amount of foodstuff depends on how many people are going to be served.

Ingredients :

  • one tortilla bread
  • 2 tbsp herb cream cheese
  • a few slices of salami
  • 2 or 3 lettuce leaves
  •  some cherry tomatoes, sliced. Or use medium red tomato, remove the seeds.
  • freshly cracked black pepper and chilli powder (optional).
  • Bamboo sticks or toothpicks


Toast tortilla bread.

Spread with herb cream cheese, layer with salami slices and drizzle with black pepper and chilli powder, if using.

Layer lettuce leaves and tomatoes over the salami.

Roll tightly. Chill in the fridge to firm or until you are ready to slice.

Take some bamboo sticks or toothpicks and poke into the top of tortilla roll. The distance is up to you. And then slice with a sharp knife.

Transfer onto serving plate.

Vegetarian Fried Dumplings

Vegetarian Fried dumplings

As an appetizer or as a snack, fried dumplings is very easy to make. This time I make the stuffing without meat and using minimal seasoning to feel the authenticity of the ingredients. The stuffing ingredients is the same with  Vegetarian Wonton Soup I shared in other post.

For more kick, dip in a spicy sauce or sweet and sour sauce to taste.

Vegetarian Fried Dumplings

Ingredients :

  • ready-made dumplings skin, round cut
  • 1 medium carrot, minced
  • 2 stalks spring onion, chopped
  • 250 g pak choi, chopped
  • 1/2 block firm tofu mashed
  • salt and pepper
  • oil for frying
  • dipping sauce of your choice

Mix well minced carrot, chopped spring onion, chopped pak choi, mashed tofu, salt & pepper.

Fill each dumpling skin with the stuffing. Using brush or your finger, wet around the edges and cover with another dumpling skin on top, fold around the edges to seal.

Vegetarian dumplings before frying

Fry in medium or medium high heat until golden brown. This dumpling skin get brown easily, so be wise to set the heat.

Put on paper towels to release the oil. Transfer to serving plate and serve dipping sauce as complement.

Cinnamon Apple chips

One of the alternatives to enjoy apples are made into chips. It need patience to bake it but this healthy snack is actually very easy to make.

Besides last time I’ve made Apple Ring Bread, also make apple chips using Gala apples. This type of apple is small so it’s easier when sliced thinly to make chips.

Ingredients :

  • 3 or 4 Gala apples
  • cinnamon powder

Method :

Wash apples and pat dry.

Use sharp knife slice as thin as you can. I like using a knife because I have full control over slicing process. Using a mandolin sometimes get unwanted results. I simply remove the seeds.

Prepare two baking sheet and parchment paper. Arrange apple slices in single layer on baking sheets.

Sprinkle with cinnamon powder on both sides.

Bake in preheated oven at 190 C.

Put the baking sheets in upper third and lower third.

Bake 1 hour then flip over the chips and switch position of baking sheet. Continue baking for about 1 or 2 hours depending on your oven. While baking you can do other thing.

The more they dry, they will be curly at the edges.

After I turned off the oven I let them inside for a while. And let cool in room temperature before store in airtight container.

Crisp and the natural sweet comes out without need to add sugar.

Baked Cheese Rice Balls

Baked rice balls

This Baked Cheese Rice Balls has a crunchy texture on the outside and still soft on the inside. Cheese that oozing out between rice gives another texture as well.

Eaten as an appetizer or as a snack.

In this recipe I used spring onion and parsley as a mixture. Herbs can be replaced according to the taste or may skip if not like or are allergic to the herbs.

Parsley is nutritious as long as truly wash clean and not consume too much at one time, because some type cause skin allergies to some people if not handled properly especially the type of wild parsley.

I used a wild rice mix with Langkorn that has the chewy texture and they are not sticky. Take longer to cook and need more water, about 750 ml water for 125 g Langkorn rice.

Makes  8 pieces, small size.

Ingredients :

  • one-half cup cooked wild rice mix
  • 1/2 cup mature cheddar cheese, chopped
  • 2 tbsp grated Parmesan cheese
  • 1 tbsp finely chopped fresh parsley
  • 1 tbsp finely chopped spring onion
  • 1/2 tsp garlic powder
  • 1 tbsp corn starch
  • 1 egg
  • salt and pepper, use your instinct


  • 1 cup panko bread crumbs (or regular bread crumbs)
  • little oil
  • fresh parsley leaves and hot sauce for garnish (optional)
  • Or Ketchup/ mayo to serve.

Method :

  • Mix all ingredients except oil,bread crumbs and garnish. If too dry, add little water.
  • Shape into small balls.

  • Coat evenly with panko bread crumbs all over balls.

  • Put in the fridge for a while.
  • Preheat oven at 200 C ( I used electric oven).
  • Arrange rice balls on baking tray with parchment paper. Brush the top with oil.
  • Bake until the outer golden brown and the cheese oozing out, about 30 minutes or so, depending on your oven.
  • If you like the color more brown, set the oven to broil for few minutes before turn off.
  • Transfer to serving dish and add garnish if like. Enjoy with ketchup or mayo.

Still on potato and this time, donuts. Or doughnuts? Potato Donuts

The recipe is from my mother that she often made when I was small cute kid.

I like small donuts too!

Because I think that the small one more comfortable to eat than the jumbo one. I mean I feel comfortable to devour ha..ha..ha..

Do you like some? Come to my home and we enjoy them with a hot drink !

Eat two mini donuts will not make you bigger, unless you gobble up a dozen of them at the same time.

Well let’s make it.

These ingredients make about 20-22 pieces mini size and less if you make bigger size.

Ingredients A :

  • 2 medium potato, boiled, mashed evenly
  • 300 g flour, separate half-half
  • 1 sachet dried yeast, dissolve with 50 ml warm water
  • 1 tsp baking powder
  • 2 tbsp granulated sugar
  • 2 tbsp milk powder ( I used coffee creamers)
  • 2 eggs

Extra flour for kneading

Ingredients B :

  • 2 tbsp butter ( I used margarine ), melted
  • 1/2 tsp salt

In a large mixing bowl, mix together ingredients A, use a half (150 g) of flour.

I mixed it with a wooden spoon into sticky dough. Cover with a towel and let rest warm place for 30 minutes (first rest). I put near the window with bright sunlight.

After 30 minutes and the dough rise, add ingredients B and the rest of the flour to the dough.

Knead until smooth and elastic, if still sticky please sprinkle with extra flour as needed. Potato dough will make it more sticky than just flour dough.

After the dough smooth and elastic enough, cover again and let rise for about an hour (second rest).

After rise for second rest, roll out the dough with a rolling-pin on floured work surface. Cut into circular shape and make small hole in the middle.

I used glass rim to cut the dough and make the hole in the middle with bottle cap. I don’t have donut mold. Do you see a yellow bottle cap in the top corner?

Fry in plenty of oil with medium low heat. High heat will make donut burst or broken.

Flip them to have evenly golden colour. I fried them in few batch.

Place fried donuts on paper towels to release excess oil. Let it cool.

Make topping as you like. I made some chocolate glaze then sprinkle with chocolate and coloured sprinkles, some with powder sugar.

The fact is, my husband Big Bear, came home from work and he had finished five pieces.

Yumm…the texture was perfect!  Puffy!

Crisp outside and some small hollow inside. Enjoy with hot drinks.

Asparagus Pastry

Asparagus pastry

Another option to eat asparagus in simple way is by stuff it in puff pastry. About 30 minutes include preparation. Asparagus Pastry for party snack or just enjoy it with a cup of hot drink.

In fact this is nostalgic for me, tried to make this when I was small girl. Have nothing experience about baking. At that time my mother still use conventional oven over the stove.

And now I want to make it again with really simple steps. I make this snack in the same day with asparagus for breakfast in my last post.

Ingredients :

  • green asparagus, the number is up to you, clean and cut the hard end
  • red radish, if you like, slice
  • salt and pepper
  • frozen puff pastry, the number is up to you (I use the square-cut).
  • 1 egg, beaten

Thaw frozen puff pastry for 10 minutes. Preheat oven at 225 C

Line puff pastries  sheets (I line them on chopping block ), then brush with egg wash.

Place green asparagus and radish in the middle of the pastry diagonal direction, season with salt and pepper.

Bring two opposite corner of square pastry together and seal with egg wash.

Place in baking sheet on parchment paper.

Brush all the surface with egg wash. Season again with freshly crack black pepper.

Bake at 225 C preheated oven for 15 – 20 minutes or until golden brown and puffy.

I enjoy it with a cup of hot coffee. Just so simple.

And that pretty elephant on the cup ? I love it !
